There are so many renditions of this delicious , healthful and gorgeous meal, so get creative! We like to use whatever veggies our garden has to offer and Rainbow Trout from Caudle’s Catch found at the Kitchener Market. It is a crowd pleaser – from baby William all the way up to Pop-pop!
Here is what we recommend:
Lay down a bed of leaf lettuce on a platter.
Drizzle lightly with Green Goddess Dressing.
- Green Goddess Dressing Dressing:
- 2 TBSP White Wine Vinegar
- 1 TBSP Dijon Mustard
- 1/4 Cup Olive Oil
- 1 tsp Honey
- Salt + Pepper
Blend above ingredients, then pulse in some fresh herbs. (Ex. Basil, parsley, tarragon)
Arrange the Below on top of your bed of lettuce in sections:
- Green beans (blanched then sauteed with garlic and olive oil)
- Mini assorted potatoes (boiled, sliced and drizzled with olive oil)
- Fresh cucumber, yellow pepper, and beets (sliced)
- Pitted Kalamata olives
- Hard-boiled eggs (sliced)
- Trout – Season with Cape Herb and Spice Fish Seasoning found at Vincenzo’s and BBQ on a baking sheet until done, place fish in the center of your platter
Top it all off with few sprigs of fresh herbs and capers. Serve addition dressing on the side.
